The first thing to do when we have all the ingredients is Peel the potatoes and cut them in sheets so that they acquire a rounded shape, trying not to cut them too thick so as not to risk them being raw. Peel the onions and cut them into julienne. To do this, we divide the onion in half, place each half upside down on the table and cut from side to side into thin pieces. The onion should be cut in an arc. Further, Peel the garlic and cut into taquitos. The most advisable to save us work is to buy clean salmon with bones and skin.

We introduce everything in a tray, putting the rounded slices of the potatoes and creating a bottom. We spread the taquitos of the two cloves of garlic on the potato and cover the content with a little olive oil, in addition to seasoning it with salt and pepper. We preheat the oven to 150 degrees and we introduce the tray with the potatoes, onion and garlic, but without the salmon. We leave it for approximately 30 minutes, until the potatoes soften.

Another option to perform the previous step is by boiling the potatoes previously in water, to later introduce them in the tray, together with the garlic and onion and bake them directly with the salmon; We prefer the first option, because it is tastier. In the case of choosing the first option, while the potatoes are in the oven we serve the salmon in a pan with a little oil to make it a little on the outside, leaving it raw inside. It is only about giving a golden touch to the salmon and that it is a little cooked on the outside.

Once we have achieved the golden hue of salmon and our potatoes, which continue in the oven, if they are already soft, we remove them and we introduce the salmon. We add the amount of a glass of white wine on the contents of the tray and put it back in the oven, at the same temperature as before, until the salmon is done inside. Normally, the time it takes to cook salmon it is not more than 10 minutes, so it is best to review the state of our salmon to prevent burning or drying out.
