How to make American sauce

The American sauce is a sauce made with seafood fumet and flavored with different ingredients: with tomatoes, garlic, onion, cognac and white wine.In this article we tell how to make american sauce, so we encourage you to test your culinary skills.

Low difficulty Ingredients:
  • 6 large prawns
  • 3 large carabineros.
  • 3 kernels
  • 3 shallots or steps.
  • 2 large and ripe tomatoes.
  • 2 cloves of garlic
  • 1 large onion
  • 2 tablespoons flour
  • 1 branch of fresh tarragon.
  • 3/4 of a liter of fish stock.

Put oil to heat in a saucepan over low heat.

While the casserole oil is heating, cut the onion and chop the garlic and shallots.

When the oil is hot, add the onion, garlic and shallots and let it simmer until tender and golden.

Then, when the different ingredients are poached, you have to add cognac to the casserole and then you have to set it on fire and flambé it until the flame is consumed.

Then you have to add the chopped tomatoes and tarragon and let it cook for about 5 minutes while stirring.

After 5 minutes you have to throw the carabineros, prawns and chopped nécoras (with the head, the skins and everything) and stir it all together.

The next step is to add the two tablespoons of flour and stir again for 2 minutes.

Then you have to cover everything with the fish stock and cook it over low heat for half an hour.

After half an hour, you have to remove the pan from the heat and crush everything.

Once you have all the crushed ingredients, you have to pass the dough through the Chinese strainer so that the sauce is very fine and without tripping.
